Basic Pastry Dough

  • 1 1/2 cups all purpose flour
  • 1 tsp sugar
  • 1/2 tsp coarse salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into small pieces
  • 3 Tbsp vegetable shortening (Crisco)
  • 4-5 Tbsp ice water
  1. Place the flour, sugar and salt in a food processor and process quickly to combine.
  2. Sprinkle in the butter and shortening.  Pulse 10 to 15 times or until there are just a few pea-sized pieces of butter in the mixture.
  3. Sprinkle with 3 Tbsp water and pulse until dough comes together when squeezed with your hand.  Add addition water, 1 Tbsp at a time, if necessary.
  4. Turn dough out onto a large sheet of plastic wrap and press into a disk.  Cover with another sheet of plastic wrap and roll into a a rough circle.  Chill until firm, 15-20 minutes.


This recipe will make a 10-15 inch circle depending on the thickness.
